From the Kitchen: Vanilla Brown Sugar Granola

One of my favorite breakfast foods is sweet, crunchy granola. I love it as a yogurt topping with berries or as cereal with milk. Since we’ve been preparing to move for the past week or so, we’ve been doing our best to eat everything in our fridge and pantry. I had a full container of oats so I decided to make homemade granola for the first time. I found tons of recipes online and they all seemed similar so I borrowed a few tips and winged it. So delicious!

Vanilla Brown Sugar Granola

Here’s what you’ll need:

4 cups Oats

1/4 cup canola oil (or 1/2 cup butter)

1/2 cup brown sugar

1/4 cup honey

1/2 teaspoon cinnamon

4 teaspoons vanilla

Directions:

Preheat oven to 325 degrees. Mix oats, brown sugar and cinnamon together in a large bowl. In a small saucepan, melt butter (or heat oil) over low heat. Add honey and continue to cook, whisking until combined. Remove saucepan from heat and stir in vanilla. Pour warmed  honey/butter over the oat mixture and stir (I use my hands) until all the oats are evenly coated. Spread mixture evenly out onto a parchment lined baking sheet. Bake for about 30 minutes, rotating the baking pan about 15 minutes in to ensure even color. Allow granola to fully cool (about 30 minutes), it’ll get crunchy as it cools. Break the granola into smaller chunks and store in an airtight container. I used mason jars I had on hand. This stuff lasted about a two days in our house so our granola was never in danger of going stale but I assume like any other granola, if kept in an airtight container, it should stay fresh tasting and crunchy for about a week. Enjoy!

    looks yummy! i looove granola, too. you’re right, this would make a great xmas gift =)

      It was so good! We scarfed it down in about 48 hours…. I may or may not have had granola for dinner two nights in a row…(I did). Miss you!
