From the Kitchen: Grilled Veggie Salad

Summer made its grand debut this holiday weekend. We finally had weather worthy of relaxing by the pool. And as the weather warms, our palate turns to lighter, fresher fare. I made this delicious grilled vegetable salad for dinner and we enjoyed it al fresco. Using the same dressing as this salad from last week, I simply grilled a variety of vegetables we had on-hand: green and yellow zucchini, red bell pepper, and beets. I combined the dressing and veggies with crisp mixed greens, pitted kalamata olives and crumbled feta cheese. We absolutely loved this salad. Paired with a cold glass of fizzy water with lemon, it was everything you want in a warm summer night meal. We’re looking forward to more fresh summer fare in the weeks to come so I’ll share our warm weather meals whenever I can. I hope you had a wonderful holiday weekend! xoxo!

    Hmmm, that salad looks MUCH better than the lunch I prepared for myself. Ha, ha. I need to be way more creative!
