From the Kitchen: Kale and Artichoke Dip

I started my second week of bootcamp this morning and after a weekend of eating my heart’s desire, I’m in dire need of some “back-on-track” action. My biggest eating issue is snacking. I’m one of those people who needs to eat something every other hour. Other than my soft spot for desserts, I’m usually a pretty good eater so my snack foods often revolve around fruit, veggies, and nuts but I get bored eating the same stuff and when I’m bored with the good stuff… I go for the bad stuff. For this reason, I like to play with my food and come up with inventive ways of eating healthy whenever possible. We happened to have all of the ingredients for this yummy dip at home already, including the fresh kale (which btw, is a household fave around here). I used this recipe and switched out the spinach for kale. This dish is completely vegan, the creaminess comes from the cannellini beans. I can’t say that this is anywhere close to the spinach artichoke dips I’ve had in the past (nor to the caloric intake). It’s really its own thing. It’s a healthy snack and a great way to get greens in you. In fact, we thought it might make a good warm side dish to a chicken or fish dinner. If you’re looking for a more true to the original, low-fat alternative, I was contemplating making this recipe which uses low-fat dairy so you’ll still get that tasty, creamy goodness, but less fat and calories. Ultimately, I opted for the vegan version because I like to go all out and then reel myself in. If any of you try this recipe, I’d love to know what you think. It was good but it has some room for improvement so I think I’ll be experimenting with it in the weeks to come. xoxo!
