Happy Friday + Triple Berry Pies….in Jars!

Happy Friday! We’re headed to Red Rock Canyon State Park with a couple of our friends today. We split the menu up and tonight we’re in charge of dinner. We prepared slow-cooked shredded beef tacos with fresh pico de gallo and for dessert, three berry pie! I’ve been looking for an excuse to make these jar pies for ages now and since we need portable options for camping, these pies are perfect. I used this recipe for the crust and berry filling. There are a number of website and blogs that explain the baking in a jar process so you can google to find what works best for you. I lined each jar with pie crust, filled the jars about 3/4 full with berry filling and topped each pie with a top crust. Then, I baked them on a cookie sheet for about 35 minutes at 325 degrees. We have yet to eat them since they’re tonight’s dessert but if the sweet, fruity scents that filled our house while the pies were baking are telling at all, I think we’re all in for a delicious treat.     Nice idea! I’ll have to try one cup jars, and maybe plums or my favorite cranberry chocolate chip filling (cranberry filling). 4 oz custard cups with lids might work too, especially if you’re looking for a smaller portion size.

    That’s a nice way to deal with crisp, or crumble, or cobbler too…

      Ooooh! Thanks for the cranberry filing link! Crisps and cobblers would be perfect in a jar, in fact, I may have to try those next.

    Paola, these are so cute and yummy looking! We love seeing you all enjoy camping so much. I giggle as I remember when Jerry hiked from Highway 9 to the sea. First day they hiked in as far as the store where they could buy wine to go with dinner! By the time they got to the ocean, Jerry had bleeding blisters on his feet! But the 3-day hike was a great memory. Stay safe and have fun! Love you, Mert & Jerry
