From the Kitchen: Roasted Cauliflower

Sometimes the simplest dishes are the most delicious. Last night we enjoyed a lovely roasted vegetarian dinner comprised of cauliflower, tofu and eggplant. The cauliflower was particularly noteworthy. What it lacked in effort, it made up for in taste-delicate and true. I used this Epicurious recipe. Enjoy!

    I <3 Cauliflower! And the bad thing is I've only cooked it for the first time 3 months ago! I'll be picking some up this weekend for sure!

      Cauliflower was one of the few veggies that I’d voluntarily eat as a kid but I’ve only recently started eating it in ways other than raw. We made cauliflower soup a few weeks ago and it was delicious. We also made Martha Stewarts recipe for cauliflower curry which was equally delish! Thanks for your comment!
