From the Kitchen: Chocolate Dipped Florentine Cookies

April 20, 2011

I’ve had a long-lasting love affair with the chewy, crispy, caramelized almond flavor that gives the Florentine cookie its unique taste. I often associate the treat with the holidays but my craving was too strong so I just had to share this recipe by David Lebovitz. He uses sliced blanched almonds but as you can see, mine are chopped which make for a “neater” looking cookie. Enjoy!

I’ve been looking for a good florentine recipe. These are my absolute favorite cookies! How do you get perfectly dipped chocolate on half the cookie? I tried dipping and the chocolate was too thick, even when melted. I ended up spreading over the cookie. But your picture is what I was aiming for. Any helpful tips would be appreciated. Thx!
