From the Kitchen: A Quick Bruschetta Lunch

Hubs and I had this for lunch yesterday…so delicious and so fast and easy to make. In fact, we happened to have all of the ingredients at home already: 1/2 French baguette that needed to get eaten, 1 tomato-diced, 1 large garlic clove-minced, about 6 large basil leaves-shredded, and a sprinkle of freshly grated parmesan. We cut the baguette into slices, brushed a little bit of olive oil onto each slice and popped them in the oven at 350 degrees for about 10 minutes. Meanwhile, we tossed the other ingredients with a light drizzle of olive oil and balsamic vinegar. Salt and pepper to taste, and we were in business! We had a tasty lunch made in about 15 minutes…it took us about 5 minutes to eat it all! Do you like bruschetta? I found a couple of  yummy sounding recipes here and here. Enjoy!
