From the Kitchen: Chewy Chocolate Hazelnut Cookies

So, I’m a dessert gal. I think that’s pretty obvious by now. I tend to like almost everything that’s sweet and decadent, cookies included. Every so often I make or taste food that just blows me away. This cookie right here may be the BEST cookie I have ever tasted. Period. Really, it’s that good. It’s a perfect balance of buttery goodness, chocolate, sweet, salty and chewy…cold glass of milk? Uhm, yes please!

I’m a huge chocolate fan and I absolutely love hazelnuts combined with chocolate so I added some to this recipe instead of the optional walnuts. I’ve been eating way too many of these guys…waaay too many! Not that you need a reason but I hope you find an occasion to make these amazing cookies because they are seriously good! Enjoy!

Chewy Chocolate Hazelnut Cookies

adapted from this Food Network recipe.

Here’s what you need:

  • 2 1/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 sticks butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs, beaten
  • 1 tablespoon vanilla
  • 1 teaspoon finely ground espresso
  • 1/2 cup unsweetened cocoa
  • 2 cups chocolate chips
  • 1/3 cup chopped hazelnuts (skins removed)

Directions:

Preheat oven to 375 degrees. In a bowl stir together flour, salt, and baking soda. In another large bowl stir together butter, both sugars, eggs, vanilla and cocoa. Gradually stir flour mixture into butter mixture and mix until combined. Stir chocolate chips and walnuts, if using, and stir to distribute evenly.

Drop dough by tablespoonfuls onto greased baking sheets and bake about 6-10 minutes. (I used a cookie scoop and placed only 6 cookies on my baking sheet at a time so that they wouldn’t stick together. Also, I like my cookies chewy so 9 minutes was all I needed per batch but since everyone’s oven is different, keep an eye on them after first 6 minutes). Cool on a baking rack but be sure to taste them warm! Be prepared to be blown away, they seem to taste even better a day or two later! xoxo!

    If these cookies taste as good as they look I’m not sure if I could stop eating them
