raspberry and lemon linzer cookies

These are some of my favorite cookies. I liked making the dough but I’m not a huge fan of rolling stuff out and having to use cookie cutters. I prefer the ploppy kind of cookie dough. Luckily these weren’t too hard or too time consuming to make. They are, however, very fragile and brittle. The dough is a mixture of flour, ground walnut, and butter plus a few other items (sugar, etc) which is why it’s so flaky, almost like a pie crust. They have to be handled very carefully or they’ll crumble as you bite into them. I used a store bought raspberry jam and lemon curd for the filling. These cookies were a hit in my book, Evan wasn’t too keen on them… more for me! Enjoy!
