Homemade Focaccia Bread!

I was just gifted my very first Kitchenaid stand mixer from my soon-to-be mom and dad in-law (an early b-day gift) and I could not be more happy! I’ve been finding any excuse to use it. Last night we decided to make turkey burgers for dinner but we didn’t have any buns…opportunity! Instead of running to the store (which is actually running/walking distance) I decided to make fresh focaccia bread. Epicurious.com is my go-to recipe website and I found a really easy and tasty recipe for a thyme focaccia, which sounded just right. I made a second plain focaccia for pizza that we ate for dinner tonight…it was unreal.


So, the turkey burgers were last night and pizza was tonight… OMG… that’s all I can say about that. Hands down best pizza I can remember ever having, and I’m no stranger to pizza. We decided to only use items we already had at home… having hosted Thanksgiving, we’re still fairly well stocked, we found chicken apple sausage, aged cheddar and aged parmesan cheeses, sun-dried tomatoes, olive oil and fresh rosemary. We had no idea, what was going to come of this combo of toppings… when we each took our first bites we just looked at each other like WTF! Can’t beat fresh focaccia bread pizza. Evan’s the salad guru in our home, he made a wonderful mixed baby green salad with toasted pine nuts and a balsamic vinaigrette to accompany the pizza.
