love+cookies

I’m working on adding new sweets and treats to the love+cupcakes menu for the upcoming holidays. Can’t beat deliciously chewy, homemade chocolate chip cookies! They were great!

So good, in fact, that I must share the recipe. I’ve been trying to perfect it for a while and I finally reached a point where I can’t really find more room for improvement. Since I bake so often, I have to exercise self-control all the time, otherwise, I’d blow up like a balloon! These cookies were so awesome… I ate four back to back!! Not cool people…I have a wedding dress I need to fit into! I hope you enjoy then as much as I did (or even half as much!)

Chewy Chocolate Chip Cookies (makes about 2 dozen cookies)

What you’ll need:

1 cup (2 sticks) unsalted butter

2 1/4 cup flour

1/4 cup sugar

1 1/4 cup brown sugar (light or dark)

1 teaspoon salt

1 teaspoon baking soda

1 egg + 1 egg yolk

2 tablespoons cream

2 teaspoons vanilla*

2 cups semi-sweet chocolate chips or chunks*

*use the best quality vanilla and chocolate you can find. using good ingredients really makes a huge difference.

Preheat oven to 375. Melt the butter on low either in a microwave or a saucepan. In a medium bowl, sift flour, baking soda and salt together and set aside. In a large bowl, combine melted butter, sugar and brown sugar on a medium speed. Continuing on medium speed, add whole egg and yolk making sure they’re well incorporated. Add the cream and vanilla until well mixed. Mix in flour mixture in 1/2 cup intervals until well combined. Fold in chocolate chips (candy pieces and nuts are also great in this cookie dough).

Using a cookie scoop, place scoops of dough on a parchment lined baking sheet. To avoid cookies from sticking together, I don’t place more than 6-8 cookies to a sheet. Bake for 11-15 minutes or until slightly browned. I’m a cookie hawk… I sit and stare at them to make sure they’re not going to over cook, I suggest checking in the on them every 5 minutes or so. Cool cookies on a wire rack and if storing them for later, use an airtight container. ENJOY!!!
