Gluten-Free PB+J Cupcakes with Strawberry Cream Cheese Frosting

I’m always experimenting with new cupcakes and desserts and since it’s just me and my fiance, Evan, I always need brave and willing souls to eat up my creations… otherwise, we’d each be about 40 pounds heavier. So, I usually send my baked goods to work with Evan. One of his co-workers is gluten intolerant and is never able to eat the treats I send. It just happened to be her birthday today, so I thought…”opportunity”.

I had never made a gluten-free anything before (well, not intentionally) and figured I’d kill two birds with one stone. Researching gluten-free diets was easy thanks to the internet. There is an overwhelming amount of blogs and websites dedicated to gluten-free eating.  For the most part, gluten-free dishes I saw seemed totally doable even to the gluten-full (me!), but when thinking of a flourless/grainless dessert…all that came to mind was YUCK!… I could not be more wrong!

I made gluten-free/grain-free peanut butter and jelly cupcakes with the most amazing strawberry cream cheese frosting….Yes, the taste and texture of the cake was not like the usual moist, bready cake I make but, it was truly delicious considering what was missing and the frosting… well it was just that, the frosting on the cake! I’ll definitely be using that again. I have Carol over at Simply…Gluten Free to thank for this recipe.
