From the Kitchen: Roasted Strawberry Limeade
After hosting a Cinco de Mayo potluck a few weeks back, we were left with an overwhelming amount of limes that multiple guests brought to share not knowing that others would bring them as well. So what does one do when life gives you limes? You guessed it, make limeade, of course!! I had never made fresh limeade before and really only had it just a handful of times so it was surprising to find that I absolutely LOVED it and I’ve been making fresh batches weekly ever since. Last weekend, after making the Roasted Strawberry Buttermilk Muffins from Monday’s post, I was inspired to use roasted strawberries to flavor a bunch of limes that were hanging out in the fridge. Roasting strawberries intensifies their flavor and adds a fruity sweetness to the tart lime juice. Add a splash of sparkling water for a fizzy summer refreshment or a shot vodka…because,well, why not? However you have it, it will be loved, I’m sure. xoxo!
1. Preheat the oven to 375F. Toss the sliced strawberries with the sugar and place them on a lined baking sheet in one even layer. Roast them for about 10-15 minutes. Remove and allow to cool.
2. Place the cooled strawberries in a blender and puree until smooth.
3. Pour the strawberry puree into a pitcher and mix in lime juice and water. Sweeten to your liking. Enjoy!
Tip: Use sparkling water for a little fizzy lift!
